Tantalize Your Tastebuds with These Spring Vegetables in Season

Are you ready for winter to be over and spring to kick into high gear? Today’s blog celebrates the spring season variety of produce available. This is a dish from farm to table that will make you want to dig in. The best part is it’s not only in season but tasty and healthy too!

We recommend getting organic ingredients whenever possible to up the nutrition content and reduce the pesticide levels. This dish is the perfect dinner on a busy weekday or when you want to relax on the weekend but still eat healthily. Check it out!

SPRING BOW TIE PASTA WITH PROSCIUTTO AND ARUGULA
Prep and Cook time each takes about 15 minutes and serves 4.

INGREDIENTS

8 ounces of organic farfalle bowtie pasta
3 T of a good olive oil (you want to divide it by a ratio of 1 T & 2 T )
2 ounces of a quality prosciutto. Make sure it is thinly sliced and chop it
1/2 cup of fresh or frozen organic peas
1/2 cup of shredded fresh Parmesan cheese
1/2 teaspoon of freshly ground black pepper
1 cup of pasta water, set aside
1 and 1/2 cups of organic baby arugula
2 T fresh organic mint leaves, thinly sliced

PREPARATION

1- Boil 3 qts of water with 1& 1/2 T salt. Add bowtie pasta; cook until it is al dente.
2- Cook prosciutto in a non-stick pan lightly coated with 1 T olive oil. Arrange the slices in a single layer in the pan over medium heat. Turn slices after 3 minutes. You don’t want to crisp the slices. Remove from heat.
3- Take some pasta water, mix in peas with the pasta and cook for one minute. When the bowtie is al dente remove one cup of the water and set it aside.
4- In a colander, strain the pasta and peas and add them the prosciutto pan. Next, add Parmesan and lightly toss. Sprinkle with black pepper. Add about 1/2 cup of the reserved pasta water along with the arugula and mint and toss it to soften the arugula.
5- Finish with a drizzling of 2 T of the olive oil right before serving.
